Hi Friends! Long time no chat.. If you don’t know, I had a baby EIGHT weeks ago and have been a little preoccupied with this new business of momming 3 kids.
I’d like to say I’ve got the hang of things, but I don’t.
As Mr. Incredible would say, “We get there, when we get there!”.
Truth be told, I’ve found 3 kids to be a pretty smooth transition. The kids I can totally handle. But somehow accomplishing anything other than keeping them alive and feeling well loved is the challenging part.
I’ve come to terms with the fact that our home may never be 100% in order during this phase of life and that is OKAY. I say it’s okay, because it HAS to be okay. If I don’t accept it then I’m going to feel like a failure 90% of the time and that is NOT okay.
Can anyone else relate!? How do you get the dishes, laundry, cleaning, etc. done when you’re interrupted every few minutes to nurse, change a dirty diaper, bounce the baby to sleep, wipe a booty, feed all the hungry belly’s every few minutes?
And if you do, then kudos to you, mama! Relish in your accomplishment, you unicorn of a human!
The reality is, we cannot do ALL of the things ALL of the time and we shouldn’t expect ourselves to be able to.
So for today I’ll savor the accomplishment of making a batch of this paleo granola and if I”m lucky, maybe I’ll even get all of the dishes done during nap time today too!
And, maybe not.
And that’s okay, too.

Paleo Almond Coconut Granola
- 2 cups slivered almonds (can use whole and chop them yourself)
- 2 cups chopped pecans (can use whole and chop them yourself)
- 2 cups unsweetened shredded coconut
- 1 cup unsweetened coconut flakes
- 1/2 tsp sea salt
- 1/2 cup honey
- 1/3 cup virgin coconut oil
Set oven to 300 degrees.
Line a large baking sheet with parchment paper.
Add nuts and coconut to a large mixing bowl. Stir until well dispersed.
Melt coconut oil, honey, & salt in a small saucepan over low heat.
Once coconut oil & honey have turned to liquid, add to mixing bowl and stir until well combined.
Pour granola onto a baking sheet and spread into a flat smooth layer.
Pop into the oven for 20 minutes. Stir halfway through to ensure even baking.
Remove from oven once timer goes off and let granola cool completely in the pan before eating.
Allowing the granola to cool first will allow it to harden up and form large chunks.
Break chunks over a bowl of yogurt and berries, eat plain as a snack, or top with some fresh almond milk for a tasty and filling breakfast!
